With a strong preference for everything organic, I also use plant-based and biodegradable products as much as possible and avoid processed items and plastic. Every week I visit Connecticut’s local markets, meet growers, producers but also gatherers and foragers to find the best local ingredients and create a quality relationship with my suppliers who sometimes become friends.

Before I moved to New Haven / Yale in September 2019, here’s what the New Zealand Herald said about my cooking classes
It sounds like a cliché but I always wanted to be a chef and I became an apprentice at the age of 14 in a very nice Avignon restaurant ‘Le Petit Vernet’ before life changed my plans and graduated with honours as a professional chef 20 years later in Nice. During this period though I made the most of discovering exciting food while traveling extensively throughout Europe and the US, working in kitchens but also in IT, journalism and film making until I really started my culinary career at the beautiful 5* Relais et Chateaux Hôtel Restaurant Le Mas de Pierre, in Saint Paul de Vence. Thanks to chef Emmanuel Lehrer, I learnt modern French gastronomy, as a commis and demi chef de partie. To broaden my horizon, I went on to Forum Jorges François in Nice. There as a second, I led a brigade of 10 cooks and designed a daily Zero Waste menu from scratch for 100 people, under the supervision of chef Philippe Bouchet. In the last 3 years I lived and worked in Auckland NZ where I set up my private chef business. In September 2019, we just moved to New Haven, where my composer wife studies her musical arts masters degree at Yale university. In the greater New Haven are and southern Connecticut, I will get a commercial kitchen and private space available asap to organise cooking classes and demonstrations. Arno catered a party of 16 in our home with help from a waitress for drinks and food service. They were both fantastic and lovely to have in our home. The food was very good. Arno was a great help selecting fresh produce from the market beforehand. We had a whole scotch fillet beef main for which he made fresh bearnaise sauce. We would happily have him back again!

Arno catered for a special birthday luncheon for us and our friends fifteen in all. The three courses were all superb and all our guests were enthusiastic about the quality and interesting flavours of the various dishes
The snapper entrée looked beautiful and there was a great mix of flavours. Guests were able to choose between tarahiki and eye fillet steak and both mains were excellent. I had the steak which was just perfect in every way!
The Louise style rhubarb tart was so delicious that we would happily eat it several times a week. And Arno did all the clearing up too! We were so impressed by his positive approach to the meal, his efficiency and flexibility, and his whole approach to food. Highly recommended!!
